Bitterness is one of the most common coffee complaints, but it’s also a natural part of coffee’s profile. Caffeine and quinic acid contribute to bitterness, especially in Robusta beans, which contain more caffeine.

 

Bitterness often comes from over-extraction, which happens when water spends too much time pulling flavors from the coffee grounds. For example:

 

Slow espresso extractions or leaving a French press brew too long can amplify bitter notes.

The first half of an espresso shot yields bright, positive flavors, while the second half brings out darker, bitter notes that balance the shot.

Fun fact: Bitterness is a natural defense mechanism for coffee plants—it helps them ward off predators!
